Friday Night Leftover Pizza

Last night we made one of my new favorite, extremely cheap meals. This is so easy, I use Pillsbury thin crust pizza dough, however if you know how to make your own that would be even better. It also helps to pre-bake the dough in a preheated 400 degree for about 4 or 5 minutes so that your crust won't soggy.
For the sauce, use equal parts pizza sauce (spaghetti sauce will work too) and barbecue sauce mixed together. Whatever brand you have on hand will do.
Use a mix of mozzarella, cheddar, and Monterey jack cheeses. (any of your faves that you have on hand will work too.)
For the toppings I use leftover shredded chicken, pork or beef (like from a pot roast). Then I saute onions, bell pepper, and garlic to put on as well. Top it off with more cheese and bake for another 7 to 8 minutes until everything is golden brown, bubbly and delicious!
The key here is that every thing that goes on this pizza is something that we already have at home. You can use this idea and make it your own by using up your leftovers this way.
